MDWA in Radio 357„s ”Bistro" programme On cuisine, wine and the art of experience

The MDWA band appeared on the programme „Radio 357”s “Bistro”, run by Katarzyna Pruchnicka. The conversation provided an opportunity to discuss the restaurant from several perspectives: cuisine, art, design, wine, and the atmosphere that develops among the people who work together every day at and around the same table.

Dominik, MDWA’s head chef, spoke about Kashubian flavours reimagined as haute cuisine. He discussed how local recipes, produce and memories can serve as the starting point for a contemporary tasting menu. At MDWA, tradition is not recreated literally, but is reimagined through technique, aesthetics and the kitchen’s unique perspective.

Karolina, PR & Marketing, She spoke about the art featured in the restaurant’s interior: the history of the three paintings on display at MDWA and the role of young designers in creating the décor. The interior here is not merely a backdrop for dinner. It is part of the experience, alongside the lighting, the details, the rhythm of the service and the way in which the guest moves through the successive stages of the evening.

Michael, MDWA sommelier, discussed the art of selecting wines that complement the character of the dishes. Pairing in a restaurant is not merely about matching wine to the menu. It is a careful process of creating harmony: seeking out elements that enhance the structure of a dish, bringing out its acidity, depth, freshness or tension. Here, the glass should engage in a dialogue with the plate, rather than dominate it.

The conversation also gave a sense of the atmosphere at MDWA: close-knit, family-like, and based on teamwork and trust. This is a key part of the restaurant’s identity. Behind the impeccable service, the original menu and the artistic décor are the people who create a place with real character.
