The Idea of Place

MDWA was born out of the belief that a restaurant can be more than just a place to meet at a table.

It is a space where cuisine, art
and atmosphere create one experience.

The restaurant concept focuses on perceiving sensations with all the senses. It is a journey through the world of products, subtly inspired by the history of Gdansk and its culinary heritage.

At MDWA, we want visitors to be able to slow down for a while and immerse themselves in a world of tastes, smells and art.

The beginning of a story

The idea for MDWA was born out of a long-standing fascination with gastronomy and contemporary art.

Filip Wójcikiewicz, a fourth-generation hotelier and restaurateur who has been developing the fine dining scene in Gdansk for years, is behind the restaurant concept.

MDWA is a natural continuation of the experience gained from the creation of the Michelin-starred Mercato restaurant.

This place was born out of a dream of a restaurant representing the highest level of the world.

Grandson of a Kashubian woman, father of three children, keen sailor and owner of the Hilton Hotel. For more than a century, his family has nurtured Polish hospitality - a value that
at MDWA has been given a modern face.

Philippe draws his inspiration - both culinary and aesthetic - from his many travels. He felt the first spark of fascination for haute cuisine more than 30 years ago when he visited the two-star Le Gavroche in London. Since then, he has visited almost 200 Michelin-starred restaurants around the world - each one a lesson, an inspiration or an impulse.

MDWA is the fruit of his fifteen years of experience in the creation of Mercato and Sen.
of utmost perfection, which he started planning five years ago. It is also their „fourth child” together - his and Dominic's.

Dominik Karpik

Dominik's culinary journey began when he was just 16 years old, joining Filip Wójcikiewicz's family hotel business. With breaks to hone his craft in Poland and Italy, among other places.

Dominik continues to have the pleasure of working with Filip, leading the gastronomy of the Hilton Gdańsk Hotel - including the MICHELIN Guide award-winning Mercato restaurant - and the new fine dining restaurant MDWA. There he is responsible for the art of combining flavours, presentation, forms and aromas. Dominik grew up in a home where Kashubian cuisine reigned supreme.

Since childhood, he has been introduced to the flavours of the region at his mother's side. It was these that shaped his culinary sensibilities. He combines his love of baked goods with a fondness for smoking techniques and cooking with fire. In the kitchen, he likes to use mainly local products - close to him - but also those from far away that surprise him with their taste, quality and texture. His grandmother used to cook in the kitchens of old Gdansk in the Old Town. Privately - also a father of three children, he loves to blow his head on his motorbike.

Our cuisine is based on local products, which we interpret in a modern and creative way. We are inspired by the history of Gdansk and the region's ancient recipes, always respecting its heritage of over a thousand years.Each dish is a composition of flavours, forms and textures, which - combined with the surrounding art - creates a complete experience.
Inspired by the jellyfish
Created from a water-based structure of oysters and capers, filled with octopus. All served on leaves of marinated wasabi leaves, reminiscent of algae.
In the spirit of op-art

The spherical sphere refers to the abstract art of Polish painting. The pulsating, colourful, spatial images build up the visitor's experience.

Win card

The wines at MDWA are selected with the aim of discovering the flavours and stories hidden in each bottle.

Our card - dubbed the „cheering up card ;)” - encourages free exploration of different styles and regions.

Instead of the classic division, we have created two intuitive categories: „Classic and traditional” and „Modern and unconventional”. This makes it easier to find the wine to match the mood of the dinner party.

Our suggestions include well-known labels as well as rare bottles that can only be found in selected restaurants.

Art

The MDWA space features op-art-inspired works from the owner's private collection. They create a dialogue between art and culinary.

Fine dining

The MDWA continues the best traditions of the Mercato restaurants, developing them with a modern approach to gastronomy.

The kitchen has been designed to reduce energy and water consumption and many of the fixtures and fittings have been created in collaboration with local artisans.

It is the small details that make up the full story of a place and its philosophy.
